Summer in a Jar

I really wanted to do lots of canning this summer.  But it sort of got away from me.

One day while at the produce market, I found South Carolina peaches on sale for $1.29 a pound.  So bought a ton and carted them home.  This was my first time using Pomona’s Pectin, and I really liked the results, so I’ll be using it again.  I made a double batch, using three cups of sugar total.  My yield was nine and a half jars.

It’s been so long since I’ve made homemade jam, I had forgotten how much better is its.  Like sunshine on a spoon.  Who needs toast?  I’ll eat it straight out of the jar, thank you.

And come January, I will be so happy to have this gorgeous summer in a jar just waiting in my cabinet, calling out for a loaf of fresh bread.

    MMMmmmmmm PEACHES! If you are wanting to count your blessings brought to you by where you currently are, yes, southern peaches are one. I have never seen a good peach, or close here (though Italy had great nectarines).
